Okay Pozole is one of my favorite things. When I first saw it I was pregnant with my first daughter and lived with my mother in law. I thought it looked disgusting but every time she made it my mouth watered. So one day I decided to try it and it was amazing! I love it and I make it a lot when it's cold outside or when I am planning for company.
So u'll need
Pork (u could use chicken if u don't eat pork)
I use many different cuts but usually I use boneless pork ribs and chop them up not bite size but in larger chunks
onion
garlic
cabbage
large can of hominy
chile de arbol (u know the small dried red chiles u can find anywhere)
limes
SO u boil the pork until cooked and then add the hominy and cut and onion in half and add that and of course salt
then after it simmers for about an hour or so take out the onion and some of the broth and add either a heaping tablespoon of crushed garlic or 4-5 cloves of minced garlic and then blend it together in a blender
then add back to the soup
I think this way gives it the best flavor
For the spicy part I've heard a few different ways to do this but the way I have learned and the way I like is to roast in a hot pan about a handful of the red chiles until they turn dark red or brown then add them to the blender with about a cup to a cup and a half of water. I also add a little salt and cumin and blend very well and set in a seperate bowl
chop the cabbage as u would for tacos (like lettuce)
and wedge the limes
u can also use raddishes
chop the onions
When the soup has simmered for about 2 hours and then hominy and pork are tender
put it into a bowl and top with cabbage and chopped onion juice of one lime wedge or more if u like and add in the chile sauce one tsp. at a time to see how spicy u like it
And that's it. It takes a little while but it's very yummy and very simple!
