I did a lot of research trying to find an authentic and somewhat simple recipe for this. My husband and I love the version from Mexico Lindo and he says that this one is better. I don't about that for sure but I will say it's so good! I put this together from about 6 recipe videos I found and it does taste very much like the one I've had in resturaunts!
Incase u haven't had Mole Poblano it's sweet, smokey and spicy. In my opinion it's not something u wanna do for just a weeknight dinner. It makes a whole lot. I would do it for family gatherings or sunday dinners or also if u want to freeze left over.
Okay so here it goes
You'll need
chicken
poblano peppers 2 or 3
bag of pasillas (dried chile peppers) also called anchos
u can also use guajillo's along with those or mix and match some but the pasillas are a must!
small can of chipotle peppers
Chicken Stock (because the water u use to boil the chicken in will not be enough)
onion 1 large
garlic 3 or 4 cloves or 2 tbsp crushed or minced
tomatoes I used 3 large or u can use 5 or 6 romas
almonds small bag
raisins about a cup
plantains I used 2
peanut butter or peanuts
semi sweet or bittersweet chocolate
anise seeds or ground or extract (I used the extract)just a drop!
cinnamon
corriander
sesame seeds
so first u take the stems off of the dried peppers and dump the seeds
some u might have to break them apart they are very dry
so u can either boil them or pour boiling water on them
enough to where they are soft and tender
also with the poblanos roast them in a pan with oil just the outsides and then put them in a bowl and cover with tin foil or plastic wrap for a while and let them get tender
in the mean time roast the tomatoes and whole peeled garlic
and cook the onions in a little oil and then blend the two with the cumin, corriander, salt and cinnamon
then when the peppers are all tender do the same take off the stems and seeds from the poblanos and blend with two chipotle peppers from the can and chicken stock from when u boiled the chicken and also from the store bought box u'll need all of it
heat a pan with a little bit of oil roast seperately
the almonds and add to blender
the plantains
the raisins
the sesame seeds (these do not need oil do this in a dry pan)
and if the peanuts are whole roast these also
then blend together in blender or food processor
add in peanut butter if u didn't have whole ones
basically just blend all ingredients
after roasted
then add oil to bottom of a stock pot and when heated add in all of puree'd mixture
u made need to add salt and u can add in cooked chicken at this point
then add in the chocolate
I used the abuela's box of hot chocolate it comes with round chocolate chunks
I just grated a whole round chunk and added that in last
at this point it may taste very strong but trust me, after it simmers it gets better and better
should simmer on low for 2 hours
this is really good served with rice and beans and tortillas
so if anyone actually attempts this let me know what u think
and to Sally since u live near me I have some left over that I froze if u would like to try it before u make it.

Mexican Rice
This is so good! Great as a side for BBQ's or with Beans
and today I am making it as a side along with beans for Mole Poblano
I don't think I am going to add the recipe for that just yet I will wait to see how it turns out, so far it smells and tastes pretty good but still has to simmer for 2 hours.
Okay so here's the recipe for the rice
U'll need
white long or medium grain rice whichever u have is fine
a small can of tomato sauce or if u like it spicy you could use a mexican tomato sauce like el pato sauce
half an onion
about 3 cloves of garlic or a heaping tsp of minced garlic
salt
about a tsp of cumin
you could use either chicken broth or water with buillon cubes
So first u heat up in large pot some oil any kind u like
it needs to enough to cover the bottom or close to it
then u add enough rice to soak that up
cook on medium heat until the rice is golden brown and toasted
then add in chopped onions and garlic
then u can add in salt and cumin
as for the bouillon I use a paste called better than bouillon I use about a tsp
it's better I think because it blends and melts easier and its great for all kinds of soups and things like that
then add the tomato sauce
then add enough water or chicken stock to fill the pot about 2/3 of the way full
Sorry I don't always measure but it always comes out perfect,
if it gets close to being done though and it's not tender u could add a little more water
then bring to a good boil
then turn down to a simmer and cover
it will be done in about 20 minutes
if there is a little water and the rice is tender just take off the lid and let it sit
Some people add carrot and corn and even lima beans corn u should add at the end and obviously unless the carrots are cooked u should add them in the beggining
However I would use canned and add them at the end
This recipe is great if u just add some chicken breast cut up as a quick and easy dinner

Flautas
This one is super easy and yummy
u'll need
corn tortillas (actually I've had it with flour also)
chicken cooked any way u like when I had it with the flour tortillas it was shredded bbq chicken
lettuce
sour cream
queso fresco
tomato
avocado
just cook the chicken and shred it
heat up the tortillas in the micro so they don't break
add in a little chicken and roll it up
fry in oil
top with sour cream first so that the other ingredients will stick to it
then add other toppings
so yummy!
tomorrow I am making mole poblano
It's one I haven't made before and It's going to be an all day thing so I will try it and if it turns out yummy I will post it for anyone who wants to make it.
It's got a lot of ingredients but if u've had it u know it's mouth watering and addictive!

Recipe Sharing!
I've thought and thought about what I could blog about, I've read so many awesome blogs and even the ones where people just blog about their day seem so much more interesting than I can imagine mine would be. So I was talking to a friend of mine, a fellow SAHM and her and I are always talking about recipes, I mean some people may think cooking is boring but when u have kids and are a stay at home mom there is only so much cleaning a girl can do ya know. So she said Lisa u know so many good recipes that is what u could blog about. At first I thought people might not be interested in that because they're aren't original recipes and it's stuff that is so easy to make, but then I thought about it for a while. I'm gonna do it cause ya know the beauty about food is that everyone can add their little twists and sometimes it can turn into a whole new thing. I just know that I am always thinking of new things to make for my hubby and since I kids running around I don't have a lot of time for it to be complicated. So please let me know if u have any good recipes to share also.
So the first one I'll add is what I am making tonight.... PATACOS
Okay I made the name up but it's a good name I think.
So Javier's mom makes something like this and my sister put her twist on it and after I tried hers I thought of a few new things I could add to it to make it my own, so here's my version.
You'll need
mashed potatoes
lettuce
cilantro
onion
chicken breasts shredded
corn tortillas
mayo or ranch
queso fresco
and some salsa
I also happen to make a good salsa too
a large can of whole peeled tomatoes
3 cloves of garlic or about two tsp of crushed garlic
2 jalepenos or more if u like it spicy
half a large onion
a handful of cilantro
2 limes for juice
and salt
just add all to a blender
So back to the patacos
chop the lettuce cilantro and onion
I mix mine altogether
cook and shred the chicken the way u like it
I've done it with fried, bbq, or pan fried
then u heat the tortillas in the micro so they're soft and wont break when u fold them
then put a small spooful of mashed potatoes in the tortilla and fold it in half making sure they don't spill out
then u fry them in oil till golden brown
then after they've cooled a little enough to handle
add in the chicken and lettuce mixture (in my opinion cilantro and onion are a must!)
this part might sound crazy but trust me it's good!
make a mixture of mayo watered down to where it looks like milk
or u could also use ranch but mayo is the best!
add it into the taco and then add salsa or tapatio sauce
and there u have it PATACOS
u'll love these tacos I promise!
